Falafel Ingredients
1 15-ounce can chickpeas
¼ cup dry plain breadcrumbs
¼ cup finely chopped parsley
½ a red onion, finely chopped
1 tsp. garlic salt
1 tsp. ground coriander
1 tsp. ground cumin

Vegan Tzatziki Sauce Ingredients
1 cup plain vegan yogurt
½ cucumber, diced
1 tsp. dill
1 clove garlic, diced
Directions
- Drain and rinse chickpeas.
- Mix chickpeas, breadcrumbs, parsley, red onion, garlic salt, coriander, and cumin in a food processor. Process until ingredients are well mixed and finely diced.
- Shape the mixture into four ½ inch thick patties.
- Warm olive oil in a large skillet over medium heat.
- Cook patties over medium heat for about 3 minutes on each side. The patties should appear golden brown, firm, and crispy.
- Set patties aside while preparing the sauce.
- Clean and dice ½ a cucumber.
- Peel and dice a clove of garlic.
- Mix vegan yogurt, cucumber, dill, and garlic in a blender or food processor. Blend until smooth.
- Recommend serving falafel on a salad, in a pita, or as a sandwich.
