The health benefits of dark leafy greens seem to be the one thing everyone can agree on in the field of nutrition! This healthy green soup recipe is my family’s favorite way to fit as many dark leafy greens into our diet as possible. 

This warm and savory mixture makes it a pleasure to eat the healthiest foods on earth. It is a perfect appetizer or side dish at any meal.

Prep Time and Serving Sizes

Prep time: 15 minutes

Cook time: 30 minutes

Total time: 45 minutes

Serving size: 1 cup

Number of servings: 10 servings

Equipment and Utensils



  1. Warm 1 tbsp of olive oil in a large pot.
  2. Peel and dice the onion and add to the large pot with the olive oil. Sauté the onion until soft.
  3. Cut the potatoes into small 1” cubes and add to the pot with the onion.
  4. Add vegetable broth and soy sauce to the pot.
  5. Bring soup to a boil then reduce heat to a simmer. Simmer for approximately 15 minutes until the potatoes are soft.
  6. Wash the greens and remove the large thick stems. Chop or tear the greens into large pieces. 
  7. Add the greens to the pot and stir until the leaves are wilted but still bright green.
  8. Season with salt and black pepper to taste. 
  9. Allow the mixture to cool.
  10. Use a ladle to transfer the soup to a food processor. You will probably need to do this in batches based on the size of your food processor.
  11. Purée the soup until smooth.
  12. Serve warm and enjoy!
