Chia seeds are an excellent source of plant-based omega-3 fatty acids. I try to include them in my diet as often as possible. My all-time favorite way to eat chia seeds is in my world-famous Vegan Chai Tea Chia Seed Pudding Recipe! This recipe is creamy, caffeinated, and provides powerful plant-based nutrition.

Prep Time and Serving Size

  • Prep time: 10 minutes
  • Serving size: ½ cup
  • Number of servings: 10 

Equipment and utensils



  1. Place 1 tablespoon of chai tea (3 teabags can also be used) in a teapot or teabag.
  2. Boil 3 cups of water and pour it into the teapot over the tea leaves. Allow the tea to steep for at least 5 minutes.
  3. In a large mixing bowl, combine the chai tea, brown sugar, and non-dairy milk.
  4. Add the chia seeds to the creamy chai mixture and stir well.
  5. Refrigerate and allow the chia seeds to soak overnight.
  6. Stir the pudding well before serving.
